Shroom Wings

Ingredients:

  • 1/2 cup wholemeal flower

  • 2/3 cup breadcrumbs (I actually made my own with leftover wholemeal bread I had at home - Roast it till crispy, and grind it into a crumbly powder)

  • 1/2 cup applewood vegan cheese (grated) or any other vegan cheese

  • 1tsp paprika

  • 3 flax egg (3 tbsp ground flax seeds and water)

  • 3 garlic cloves minced

  • 5 Shiitake

  • 3 Oyster mushrooons (shredded)

  • 3 tbsp Inspired Vegan Smoked Garlic Mayonnaise

  • Salt

  • Black pepper

Method:

Preheat oven to 180˚C. In a small bowl combine the breadcrumbs, vegan cheese, paprika, salt, and black pepper. In a separate bowl mix the flax seeds with the same amount of water (add more if it doesn’t resemble the texture of an egg mixture). Mince garlic and add to this second bowl. In another bowl add the flour and season with salt & pepper.

Make sure the mushrooms are completely dry. Coat each mushroom with a light coating of flour, then dip in the flax egg mixture, then fully coat with the breadcrumb mixture and place on a baking sheet. Repeat with remaining mushrooms.

Bake the mushrooms for 20 minutes or until golden brown. Serve warm with a dip of your choice (I used a vegan garlic mayonaise).
